The Ultimate Lemon Meringue Pie.
This lemon meringue pie recipe is a mix of my favorite things, fabulously zesty lemons, nuts, spices and simplicity........which is also one of my favorite things, as one of my mantras is .........keep it simple :)
This lemon meringue pie recipe has elements of the Mediterranean diet foods in that it contains lemons.....but it is an unashamedly, rich and tempting treat that could not be omitted from our cookbook selection, enjoy !
It is not a typically conventional recipe as it cheats a little and thus saves any terribly stressy kitchen tantrums.........it is ideal for the children to make and of course devour........it feeds 4 ravenous people or 6 less hungry people.
It does not involve any tricky bits, no hovering over the stove, just do it in 3 steps,
base, middle and top !
Ingredients (which obviously can be jiggled about with, according to your preferences).
The Ultimate Lemon Meringue Pie Recipe Ingredients - Shopping List.
1 Packet of Shortbread biscuits
Pecans and Almonds.
1 can Sweetened Condensed Milk
Cream of Tartar
Rasberries and Vanilla Ice-cream or Double Cream to serve :)
The 3 Steps - Base, Middle and Top.
For the base.
1 packet of shortbread biscuits ( 200g) - you can choose your favourite, digestives, etc !
Small handful of pecans and toasted almonds,- again you could mix it up with hazlenuts, walnuts. brazils...whatever !
2 tablespoons of runny honey.
Pinch of nutmeg.
Pinch of cinnamon.
Knob of melted butter.
For the middle.
1 can of sweetened condensed milk (400g).
3 egg yolks.
1/2 cup lemon juice.
Zest of 1 lemon.
For the top.
3 egg whites
3 tablespoons caster sugar
A few drops of vanilla essence
A pinch of cream of tartar
The Ultimate Lemon Meringue Pie Recipe - Method.
Put the oven on, to heat up to 180c.
Step One - The Base.
Take all the ingredients, crush, bash and blitz, the children love this bit, combine the honey, spices and butter in well !
Stop, when you have a lovely biscuit crumb mix with which to line the dish of your desire - an ovenproof dish, that is - line this dish with the mixture.
Put into the fridge.
Step Two - The Middle.
Take all the ingredients and combine, mix well, place into the crumb base..... Place back into the fridge.
Simplicity itself !
Step Three - The Top.
Whisk the room-temperature egg whites until they start to get frothy, add the cream of tartar, keep whisking, add the vanilla essence, add the caster sugar, gradually, keep whisking until you have smooth, shiny peaks of egg white.
Spoon the egg white mixture onto the lemon mixture, be sure to go to the headlands (the edges!), lightly, make dips and troughs with the back of the spoon and pop the pie into a pre-heated oven of 180c for 10 - 15 minutes , stay around to keep an eye on it !
If you have a snazzy, kitchen blowtorch, you could use that to brown the top instead.
Take out of the oven and leave to cool.
Serving Suggestions - really are endless ! Anayennisi-Aromatics favorite is raspberries and vanilla ice cream or double cream ,with a little icing sugar mixed into it !
Easy Peasy Raspberry Coulis........if you just fancy a hint of fruit !
1 cup of raspberries
1 tablespoon of icing sugar
2 tablespoons hot water.
Put together in a bowl and zizz.
Drizzle or pop into a little jug to serve.
